Bambino®-Blueberry Ice Cream Parfait

1/2 Bambino® watermelon
1 pint vanilla ice cream
1 cup fresh blueberries, cleaned
Whipped cream, if desired
  1. Cut flesh from 1/2 watermelon into 1/2 x 1/2 - inch pieces (approximately 2 cups); place in bowl.
  2. Place scoop of ice cream in each of 4 parfait glass or tall glasses. Layer 1/4 cup watermelon pieces and 2 tablespoons blueberries over ice cream. Repeat layering. Top with whipped cream if desired.

Tip: Parfaits can be assembled and placed in freezer until ready to serve if desired; add whipped cream just before serving.

Yield: 4 parfaits
Each serving provides ¾ cup of fruits or vegetables.
