Green Salad with Watermelon & Raspberry Vinaigrette

1/2 Bambino® watermelon
4 cups mixed greens, cleaned and torn into pieces
1 avocado, cut into 1/2 x 1/2 -inch pieces
1 green onion, sliced
2 tablespoons chopped parsley and or cilantro
1/4 cup crumbled blue cheese

Raspberry Vinaigrette:
1/4 cup raspberry vinegar
2 tablespoons honey
1/4 teaspoon salt
1/2 cup oil

  1. Cut flesh from watermelon into 1x1-inch pieces (approximately 2 cups). Toss watermelon pieces along with remaining salad ingredients in large salad bowl.
  2. In small bowl, whisk together raspberry vinaigrette ingredients. Pour half of dressing over salad; carefully toss until evenly coated. Serve immediately. Refrigerate remaining dressing for another use.

Yield: 4 servings
Each serving provides 1 3/4 cups of fruits or vegetables.
