1/2 Bambino® watermelon
1 medium mango, cut into 1/2 x 1/2 -inch pieces
1 to 2 tablespoons finely chopped jalapeno pepper (1/2 to 1 jalapeno)
1 green onion, sliced
2 tablespoons lime juice
1 teaspoon sugar
1 tablespoon chopped fresh cilantro, if desired
- Cut flesh of watermelon into
1/2 x 1/2 - inch pieces. Combine 1 cup of the watermelon
pieces with remaining ingredients in medium bowl. Reserve
remaining 1 cup watermelon for another use. Cover and
refrigerate for 30 minutes to blend flavors.
- Rinse out reserved watermelon shell. Place chilled salsa in shell. Serve with jicama sticks, green or red bell peppers cut into 1 1/2-inch squares, blue tortilla chips or as a condiment with grilled fish or seafood. Refrigerate leftovers.
Yield: 2 cups salsa; 4 (1/2-cup) servings
Each serving provides 1/2 cup of fruits or vegetables.
