Melon-Mango Salsa

1/2 Bambino® watermelon
1 medium mango, cut into 1/2 x 1/2 -inch pieces
1 to 2 tablespoons finely chopped jalapeno pepper (1/2 to 1 jalapeno)
1 green onion, sliced
2 tablespoons lime juice
1 teaspoon sugar
1 tablespoon chopped fresh cilantro, if desired
  1. Cut flesh of watermelon into 1/2 x 1/2 - inch pieces. Combine 1 cup of the watermelon pieces with remaining ingredients in medium bowl. Reserve remaining 1 cup watermelon for another use. Cover and refrigerate for 30 minutes to blend flavors.
  2. Rinse out reserved watermelon shell. Place chilled salsa in shell. Serve with jicama sticks, green or red bell peppers cut into 1 1/2-inch squares, blue tortilla chips or as a condiment with grilled fish or seafood. Refrigerate leftovers.

Yield: 2 cups salsa; 4 (1/2-cup) servings
